CHICKEN FETA BOWLS

INGREDIENTS
- 1 ½ cups rice
Cooked with 2 tbsp chicken stock - 1 kg chicken
Cooked in the air fryer - Spinach or rocket
- Capsicum
- Cherry tomatoes
- Feta
- Coconut aminos
- Salt and pepper + a squeeze of lemon juice
INSTRUCTIONS
- Cook rice according to packet instructions, adding the chicken stock to the water for extra flavour. Once cooked, fluff with a fork and allow to cool slightly.
- Cook the chicken in the air fryer until golden and cooked through. Slice or chop into bite-sized pieces.
- To assemble, divide rice evenly between your bowls. Top with chicken, spinach or rocket, sliced capsicum and cherry tomatoes.
- Sprinkle over feta, drizzle with coconut aminos and finish with salt, pepper and a generous squeeze of lemon juice.
- Store in airtight containers in the fridge and enjoy warm or cold.
