CHICKEN FETA BOWLS

INGREDIENTS

  • 1 ½ cups rice
    Cooked with 2 tbsp chicken stock
  • 1 kg chicken
    Cooked in the air fryer
  • Spinach or rocket
  • Capsicum
  • Cherry tomatoes
  • Feta
  • Coconut aminos
  • Salt and pepper + a squeeze of lemon juice

INSTRUCTIONS

  1. Cook rice according to packet instructions, adding the chicken stock to the water for extra flavour. Once cooked, fluff with a fork and allow to cool slightly.
  2. Cook the chicken in the air fryer until golden and cooked through. Slice or chop into bite-sized pieces.
  3. To assemble, divide rice evenly between your bowls. Top with chicken, spinach or rocket, sliced capsicum and cherry tomatoes.
  4. Sprinkle over feta, drizzle with coconut aminos and finish with salt, pepper and a generous squeeze of lemon juice.
  5. Store in airtight containers in the fridge and enjoy warm or cold.
