Chicken and Veg Wrap (leftovers edition)

COOK TIME: 5 MINUTES (NOT INCLUDING COOKING OF THE CHICKEN/POTATOES)

It’s giving Caesar wrap 😍

I had some grilled chicken and roast potatoes left in the fridge, so I tossed them together with a natural yogurt dressing + whatever salad veggies I had lying around to make the perfect wrap filling. So easy and sooo yum!

Tip: I love mixing all the wrap ingredients in a bowl with the dressing first – that way every bite is coated and full of flavour 🙌

INGREDIENTS

  • 1 wrap of choice
  • Grilled chicken
  • Roast potatoes
  • Feta or Parmesan
  • Avocado
  • Lettuce + rocket
  • Capsicum
  • Cucumber
  • Tomato
  • Coriander

Dressing:

  • 1–2 tbsp natural yogurt
  • 1 tbsp sweet chilli sauce
  • ¼ tsp minced garlic
  • Squeeze of lemon juice
  • Salt + pepper

INSTRUCTIONS

  1. Mix dressing in a bowl, toss through all salad + protein ingredients
  2. load into your wrap.
  3. You could also serve it on its own or even in a sandwich 👌
