Chicken and Veg Wrap (leftovers edition)

COOK TIME: 5 MINUTES (NOT INCLUDING COOKING OF THE CHICKEN/POTATOES)
It’s giving Caesar wrap 😍
I had some grilled chicken and roast potatoes left in the fridge, so I tossed them together with a natural yogurt dressing + whatever salad veggies I had lying around to make the perfect wrap filling. So easy and sooo yum!
Tip: I love mixing all the wrap ingredients in a bowl with the dressing first – that way every bite is coated and full of flavour 🙌
INGREDIENTS
- 1 wrap of choice
- Grilled chicken
- Roast potatoes
- Feta or Parmesan
- Avocado
- Lettuce + rocket
- Capsicum
- Cucumber
- Tomato
- Coriander
Dressing:
- 1–2 tbsp natural yogurt
- 1 tbsp sweet chilli sauce
- ¼ tsp minced garlic
- Squeeze of lemon juice
- Salt + pepper
INSTRUCTIONS
- Mix dressing in a bowl, toss through all salad + protein ingredients
- load into your wrap.
- You could also serve it on its own or even in a sandwich 👌
