SWEET POTATO NACHO BOWLS
The easiest high-protein lunch or dinner that honestly tastes so good every single time.
INGREDIENTS
For the bowls
- 1-2 cups Lettuce, chopped
- 1-2 cups Roasted sweet potato
- Corn chips
- Grated cheese
- Parmesan cheese
- Salsa
- Natural yoghurt or sour cream
Mexican bean mix
- 500 gram Extra lean beef mince
- Black beans, drained and rinsed
- Onion, diced
- Mexican-style spices of choice (I use mingles)
- Olive oil
Guac
- Avocado
- Red onion, finely diced
- Tomato, diced
- Lemon juice
- Salt and pepper
INSTRUCTIONS
- Roast your sweet potato until golden and crispy.
- To make the Mexican bean mix, sauté onion in a drizzle of olive oil until soft. Add beef mince and cook until browned, then stir through black beans and Mexican spices. Cook for another few minutes until everything is well combined.
- In a bowl, layer lettuce, roasted sweet potato, and the Mexican bean mix.
- Top with guac, salsa, natural yoghurt or sour cream, cheese, parmesan, and crushed corn chips.
- Toss together and enjoy immediately.
Meal Prep Tip
I cooked up a big batch of roasted sweet potato and the Mexican mince mix at the start of the week so I could easily throw these bowls together whenever I needed something quick, easy, and satisfying xx
