SWEET CHILLI BARRAMUNDI

Prep time: 15 minutes
 
Cook time: 10 minutes

INGREDIENTS 

  • 2 barramundi fillets 
  • *3 cups of your fav veggies
  •  1/2 cup water 

Sauce:

  • 1 heaped tbsp minced Garlic
  • 1 heaped tbsp minced Ginger
  • 1 tbsp teriyaki sauce
  • 3 tbsp sweet chilli sauce
  • Juice of 1/2 lemon
  • Serve with rice + lemon juice 

INSTRUCTIONS:

  1. Chop your veggies and pan fry with olive oil 

  2. Add your water and cook until the veggies are soft 

  3. In a small bowl combine sauce ingredients

  4. Pour sauce into the veggies and coat evenly 

  5. Add your fish into the centre of the pan and coat with some sauce 

  6. Cook for 5 minutes on each side or until white and flaky 

  7. Serve with your rice and lemon juice 

NOTES:

*Veggies of choice: I use whatever I have in the fridge but my go-to are;

1 carrot 

1 cup chopped beans

1 zucchini 

1/2 head broccoli  

The measurements and ingredients can easily altered to suit your taste or cater for more mouths.
