4 INGREDIENT DATE SLICE

PREP TIME: 10 MINUTES

COOK TIME: 15 MINUTES

INGREDIENTS 

  • 2 cups rolled oats
  • 1 cup desiccated coconut
  • 1 cup medjool dates
  • 1 cup true protein vanilla WPI 

INSTRUCTIONS

  1. Place your dates in a medium sized bowl and cover with boiling water. Set aside
  2. In a food processor - combine your oats, coconut and protein powder
  3. Once your dates have softened, drain the date water (KEEP THE WATER), and slowly add the dates to your food processor whilst mixing on low
  4. Add in 1 tbsp at a time of your date water until the consistency becomes sticky 
  5. Line a rectangle baking tray and layer your mixture in, pressing firmly flat
  6. Bake on 180 degrees celsius for 15 minutes or until golden and crispy
  7. Slice and store in an airtight container

NOTES

OPTION TO LEAVE RAW - You can let the raw mixture set in the fridge/freezer if you prefer a raw slice. 

I baked mine so I can also use it as granola with yogurt and berries for a quick breaky - but I also love to keep a few as bars to have in between training sessions for an energy boost. 

  • You can also melt chocolate for over the top once it is out of the oven or before you set it in the fridge
