SPRING ROLL BOWLS

Prep time: 10 minutes
 
Cook time: 20 minutes

INGREDIENTS 

  • 1 x 500-gram packet of extra lean pork mince
  • 1 brown onion
  • 1 x 400 gram packet mixed cabbage carrot mix
  • 1 x 250-gram packet of vermicelli noodles

Sauce

  • 1/3 cup low-sodium soy sauce
  • 1/4 cup sweet chilli sauce
  • 1 tbsp garlic paste
  • 1 tbsp ginger paste
  • 1 tbsp fish sauce
  • Lemon juice, sesame seeds and coriander (or herb of choice) to serve

INSTRUCTIONS:

  1. Fill a large pot with water for your noodles and cook following packet instructions.

  2. In a large pan heat your oil and pan-fry your onion until brown.

  3. Add your pork mince and cook until brown.

  4. Add all of your sauce ingredients and cook for 5 minutes.

  5. Add in your mixed cabbage and combine.

  6. Let cook for 5 minutes before turning off the heat.

  7. Drain your cooked noodles and rinse under cold water.

  8. In a bowl add a serving of noodles and pork mix and top with coriander, lemon and sesame seeds.

NOTES:

The measurements and ingredients can easily altered to suit your taste. 

I evenly separated it all into 4 servings to keep in the fridge for a grab-and-goo lunch or dinner this week :)
