SPRING ROLL BOWLS
Prep time: 10 minutes
Cook time: 20 minutes
INGREDIENTS
- 1 x 500-gram packet of extra lean pork mince
- 1 brown onion
- 1 x 400 gram packet mixed cabbage carrot mix
- 1 x 250-gram packet of vermicelli noodles
Sauce
- 1/3 cup low-sodium soy sauce
- 1/4 cup sweet chilli sauce
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 1 tbsp fish sauce
- Lemon juice, sesame seeds and coriander (or herb of choice) to serve
INSTRUCTIONS:

Fill a large pot with water for your noodles and cook following packet instructions.

In a large pan heat your oil and pan-fry your onion until brown.

Add your pork mince and cook until brown.

Add all of your sauce ingredients and cook for 5 minutes.

Add in your mixed cabbage and combine.

Let cook for 5 minutes before turning off the heat.

Drain your cooked noodles and rinse under cold water.

In a bowl add a serving of noodles and pork mix and top with coriander, lemon and sesame seeds.
NOTES:
The measurements and ingredients can easily altered to suit your taste.
I evenly separated it all into 4 servings to keep in the fridge for a grab-and-goo lunch or dinner this week :)
