SALMON POKE BOWL

I rotated between salmon and tofu poke bowls for lunches and dinners last week and they were so good. The tofu was easier to prep ahead for lunches, and I cooked the salmon fresh when having it for dinner.
INGREDIENTS
Salmon
- 1 piece wild-caught salmon
- 1 tbsp chilli honey
- 1 tbsp tamari
Cook the salmon in the air fryer at 200°C for 12 minutes, or until just cooked through.
Build your bowl
- 1 cup cooked rice
- 1 cup purple cabbage (tossed with 1 tbsp rice wine vinegar for a light tang)
- 1 cup lettuce
- ½ cucumber, sliced
- ½ avocado
- Ceres Organics seaweed strips
- 1 tbsp tamari
- Drizzle of low-fat Kewpie mayo
- Sprinkle of sesame seeds
- Squeeze of fresh lime juice
- Cooked salmon or tofu
