SALMON POKE BOWL

I rotated between salmon and tofu poke bowls for lunches and dinners last week and they were so good. The tofu was easier to prep ahead for lunches, and I cooked the salmon fresh when having it for dinner.

INGREDIENTS

Salmon

  • 1 piece wild-caught salmon
  • 1 tbsp chilli honey
  • 1 tbsp tamari

Cook the salmon in the air fryer at 200°C for 12 minutes, or until just cooked through.

Build your bowl

  • 1 cup cooked rice
  • 1 cup purple cabbage (tossed with 1 tbsp rice wine vinegar for a light tang)
  • 1 cup lettuce
  • ½ cucumber, sliced
  • ½ avocado
  • Ceres Organics seaweed strips
  • 1 tbsp tamari
  • Drizzle of low-fat Kewpie mayo
  • Sprinkle of sesame seeds
  • Squeeze of fresh lime juice
  • Cooked salmon or tofu
