MAPLE PORK NOODLES

INGREDIENTS

  • 2 tbsp olive oil
  • 1 kg extra lean pork, diced
  • 1 packet udon noodles (mine are from Farmers Pick)
  • 2 carrots
  • 2 zucchinis
  • 1 red chilli
  • ½ small savoy cabbage
  • 1 brown onion
  • 2 cloves garlic
  • ½ cup maple syrup
  • ¼ cup soy sauce
  • ¼ cup water
  • Chilli oil mix (from Farmers Pick pantry, to top)
  • Lime or lemon juice, to finish

INSTRUCTIONS

  1. Bring a large pot of water to the boil and cook the noodles according to packet instructions. Drain and set aside.
  2. Peel the carrots and roughly chop them along with the zucchini, chilli, onion, garlic and cabbage.
    • I added everything into my Thermo/blender to save chopping it super fine (highly recommend if you have a strong blender 😅), otherwise just chop finely.
  3. Heat a large pan or pot over medium heat and add the olive oil.
  4. Add the pork and cook until just browned. Push it to the side of the pan, then add the veggies.
  5. Let the veggies cook for about 5 minutes, then mix everything together.
  6. Add the soy sauce, maple syrup and water. Stir well and let it simmer for 5–10 minutes.
  7. Add the cooked noodles, toss to combine and serve.
  8. Top with chilli oil mix and a squeeze of lime or lemon juice ✨
