MAPLE PORK NOODLES

INGREDIENTS
- 2 tbsp olive oil
- 1 kg extra lean pork, diced
- 1 packet udon noodles (mine are from Farmers Pick)
- 2 carrots
- 2 zucchinis
- 1 red chilli
- ½ small savoy cabbage
- 1 brown onion
- 2 cloves garlic
- ½ cup maple syrup
- ¼ cup soy sauce
- ¼ cup water
- Chilli oil mix (from Farmers Pick pantry, to top)
- Lime or lemon juice, to finish
INSTRUCTIONS
- Bring a large pot of water to the boil and cook the noodles according to packet instructions. Drain and set aside.
- Peel the carrots and roughly chop them along with the zucchini, chilli, onion, garlic and cabbage.
- I added everything into my Thermo/blender to save chopping it super fine (highly recommend if you have a strong blender 😅), otherwise just chop finely.
- Heat a large pan or pot over medium heat and add the olive oil.
- Add the pork and cook until just browned. Push it to the side of the pan, then add the veggies.
- Let the veggies cook for about 5 minutes, then mix everything together.
- Add the soy sauce, maple syrup and water. Stir well and let it simmer for 5–10 minutes.
- Add the cooked noodles, toss to combine and serve.
- Top with chilli oil mix and a squeeze of lime or lemon juice ✨
