HONEY GARLIC LOADED POTATOES

Recipe below (serves 2)

INGREDIENTS

  • 8 baby potatoes
  • 500g chicken or chicken skewers
  • 1 sachet Mingles Honey Garlic meat rub
  • 4 big handfuls spinach or rocket

Garlic sauce

  • 1 cup Greek yogurt
  • 1 tsp minced garlic

Extra toppings

  • Pomegranate
  • Feta
  • Juice of 1/2 lemon
  • Chilli honey

INSTRUCTIONS

  1. Boil potatoes until just fork tender, then chop into halves. Coat with olive oil + half the Honey Garlic seasoning.
  2. Air fry or roast potatoes until golden and crispy, I did mine in the air fryer for 25 minutes 
  3. Coat chicken with remaining seasoning and cook until crispy and cooked through. I also cooked mine in the air fryer which made this SO easy.
  4. Mix together all garlic sauce ingredients
  5. Build your bowls by dividing everything between two plates with greens, potatoes, chicken and a big drizzle of sauce. Finish with feta, pomegranate, honey and a squeeze of lemon.
