CHOCOLATE PROTEIN GRANOLA

Prep time: 15 minutes

Bake time: 20 minutes

INGREDIENTS 

  • 2 cups rolled oats
  • 1 cup soy puffs
  • *2 (1/2 cup) scoops chocolate WPI protein powder
  • 1/4 cup cacao powder
  • Pinch of salt
  • 1/4 cup extra virgin olive oil
  • *1/4 cup peanut butter
  • 1/4 cup honey
  • 1/4 cup water (optional)

INSTRUCTIONS:

  1. In a large bowl combine your oats, protein powder, cacao powder and salt and set aside

  2. In a small bowl whisk your oil, honey and peanut butter until combined

  3. Pour the wet mixture into the dry and combine. Add in water if it’s still a little dry

  4. Fold through your soy puffs

  5. Line a large baking tray with baking paper and spread out your mixture

  6. I baked it for 10 minutes then stirred it all around and baked it for another 10 minutes

  7. The longer you let it cool the crunchier it gets

  8. I love serving mine with protein yogurt and berries 

NOTES:

You can store it in an airtight container

*WPI = whey protein isolate which is an easy-digesting form of protein and is low in fat and lactose

Protein of choice = true protein

Peanut butter of choice = Mayvers mixed seed peanut butter

Soy puffs = Buy from Coles
