CHOCOLATE PROTEIN GRANOLA

INGREDIENTS
- 2 cups rolled oats
- 1 cup soy puffs
- *2 (1/2 cup) scoops chocolate WPI protein powder
- 1/4 cup cacao powder
- Pinch of salt
- 1/4 cup extra virgin olive oil
- *1/4 cup peanut butter
- 1/4 cup honey
- 1/4 cup water (optional)
INSTRUCTIONS:
- In a large bowl combine your oats, protein powder, cacao powder and salt and set aside
- In a small bowl whisk your oil, honey and peanut butter until combined
- Pour the wet mixture into the dry and combine. Add in water if it’s still a little dry
- Fold through your soy puffs
- Line a large baking tray with baking paper and spread out your mixture
- I baked it for 10 minutes then stirred it all around and baked it for another 10 minutes
- The longer you let it cool the crunchier it gets
- I love serving mine with protein yogurt and berries
NOTES:
You can store it in an airtight container
*WPI = whey protein isolate which is an easy-digesting form of protein and is low in fat and lactose
