PRETZEL OAT PROTEIN BARS

INGREDIENTS

  • ¾ cup natural peanut butter
  • ¾ cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup quick oats
  • 1 cup pretzels
  • 1 cup vanilla WPI protein powder
  • ¾ block dark chocolate
  • Flaky salt, to top

INSTRUCTIONS

  1. Mix the peanut butter, honey and vanilla in a bowl until smooth.
  2. Stir through the oats and protein powder.
  3. Blitz the pretzels in a blender until they form a flour, then fold into the mixture.
  4. Line a square tin and press the mixture in firmly.
  5. Melt the chocolate, spread over the top and sprinkle with salt (optional — it can get extra salty!).
  6. Set in the freezer for at least 1 hour, then slice and store in the freezer
