MIXED BERRY MUFFINS

Bake time: 20 minutes
Makes 12 muffins
INGREDIENTS
- 1/4 cup olive oil
- 1/4 cup liquid sweetener e.g. sugar-free maple syrup
- 1/2 cup unsweetened almond milk
- 2 eggs
- 1 tsp vanilla
- 2 mashed bananas
- 2 cups wholemeal self-raising flour
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1 tsp bicarb soda
- Pinch of salt
- 1 cup frozen mixed berries
- 1/2 cup dark choc chips
INSTRUCTIONS:
- Preheat oven to 180 degrees
- In a large bowl whisk the olive oil and maple syrup together before whisking in the eggs
- Whisk in the milk and vanilla
- Add in your mashed bananas and combine
- Add in all of your dry ingredients to the same bowl and combine
- Fold through your berries and chocolate
- Spray or line 12 muffin tins and fill with mixture
- Dust with extra cinnamon
- Bake for 20-25 minutes until cooked through
NOTES:
You can store in an airtight container in the fridge for 4-5 days
*Chocolate is optional - you can do nuts instead
