
Sweet Potato Protein Brownies

INGREDIENTS
- 2 eggs
- 2 cups raw sweet potato, peeled and diced
- 1/4 cup Mayver’s Hazelnut PB spread
- 1 tsp vanilla extract
- 1/2 cup brown sugar
- 1/2 cup chocolate WPI protein (I used True Protein)
- 1/2 cup cacao powder
- 1 tsp baking powder
- 1 tsp salt
- 1 cup dark choc chips
INSTRUCTIONS
- Preheat oven to 180°C (fan-forced).
- Steam sweet potato until soft – about 10 minutes.
- In a large bowl (or mixer), whisk the eggs.
- Add the soft sweet potato and mix until mostly smooth.
- Stir in the hazelnut PB, vanilla and brown sugar.
- Add in the protein powder, cacao, baking powder and salt. Mix to combine.
- Fold through the choc chips.
- Pour into a lined square baking tin and spread evenly.
- Sprinkle with a bit more salt on top if you love a sweet–salty combo.
- Bake for 12–15 mins for soft and fudgy, or 20 mins if you want them more set.
