Sweet Potato Protein Brownies

INGREDIENTS

  • 2 eggs
  • 2 cups raw sweet potato, peeled and diced
  • 1/4 cup Mayver’s Hazelnut PB spread
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar
  • 1/2 cup chocolate WPI protein (I used True Protein)
  • 1/2 cup cacao powder
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup dark choc chips

INSTRUCTIONS

  1. Preheat oven to 180°C (fan-forced).
  2. Steam sweet potato until soft – about 10 minutes.
  3. In a large bowl (or mixer), whisk the eggs.
  4. Add the soft sweet potato and mix until mostly smooth.
  5. Stir in the hazelnut PB, vanilla and brown sugar.
  6. Add in the protein powder, cacao, baking powder and salt. Mix to combine.
  7. Fold through the choc chips.
  8. Pour into a lined square baking tin and spread evenly.
  9. Sprinkle with a bit more salt on top if you love a sweet–salty combo.
  10. Bake for 12–15 mins for soft and fudgy, or 20 mins if you want them more set.
