DARK CHOC COCONUT BALLS

PREP TIME: 5 MINUTES

INGREDIENTS

  • 2 cups quick oats
  • 1 cup desiccated coconut
  • 1 cup True Protein vanilla WPI
  • 1 tsp cinnamon
  • 1 tsp salt
  • ½ cup smooth peanut butter
  • ½ cup honey
  • 2 tsp vanilla extract
  • ½ block dark chocolate (70%), roughly chopped

INSTRUCTIONS

  1. Add the quick oats, desiccated coconut, True Protein vanilla WPI, cinnamon, salt, smooth peanut butter, honey, and vanilla extract to a Thermomix, blender, or food processor. Blend until the mixture comes together.
  2. Add the chopped dark chocolate and either gently stir through or pulse briefly to combine.
  3. Roll the mixture into balls. This recipe makes around 20 generous-sized balls.

Optional: sprinkle with extra desiccated coconut and a pinch of salt.

Perfect little energy boosters for busy, active days or a quick pre-training snack.
