INGREDIENTS
- 2 ripe bananas
- 1 egg
- 1/4 cup olive oil
- 1 tsp vanilla extract
- 1 1/2 cups wholemeal flour
- 1/2 rolled oats
- 1/2 tsp bicarb soda and baking powder
- *1/2 block of chocolate or 1 square per cookie
INSTRUCTIONS:
- Pre heat oven to 180 degrees
- In a large bowl whisk the olive oil and egg together.
- Add in the vanilla and whisk
- Add in the bananas and mash
- In the same bowl add in the flour, oats, bicarb soda and baking powder and combine until a cookie dough forms
- Line a tray with baking paper
- Scoop out 11-12 even-sized cookies and place them evenly along the tray
- Break up your chocolate squares, and squish 1 square into each cookie (or you can chop your chocolate and fold through the mixture)
- Bake for 20 minutes or until golden brown
NOTES:
You can swap the chocolate for sultanas or even a dollop of PB in the centre. I have been loving serving mine warm with some high protein yogurt and berries.
