APPLE CRUMBLE MUFFINS

INGREDIENTS

  • 8 apples, finely diced
  • 2 ripe bananas, mashed
  • 2 eggs
  • ½ cup maple syrup
  • 2 tsp vanilla extract
  • 1 cup self-raising flour
  • 1 cup quick oats
  • ¼ cup desiccated coconut
  • ½ tsp mixed spice
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • Pinch of salt

To top:

  • Extra sprinkle of brown sugar + cinnamon

INSTRUCTIONS

  1. Preheat oven to 180°C.
  2. Finely dice your apples and add them to a large bowl with the mashed bananas, eggs, maple syrup and vanilla. Mix until combined.
  3. Fold through the remaining ingredients until just combined.
  4. Lightly spray a 12-piece muffin tray and evenly divide the mixture between the tins. Sprinkle each muffin with a little brown sugar and cinnamon.
  5. Bake for 20–25 minutes, or until cooked through and golden on top.
  6. I love these served warm with vanilla YoPRO… but they would also be unreal as a dessert with a scoop of vanilla ice cream hehe xxt
