APPLE CRUMBLE LOAF

Cook time: 40-50 minutes
INGREDIENTS
- 1/4 cup olive oil
- 2 ripe bananas
- 1 tsp vanilla extract
- 2 grated apples
- 1/2 cup brown sugar
- 1 1/2 cups self-raising flour
- 1 tsp bicarbonate soda
- 1 1/2 tsp cinnamon
- Pinch of salt
- Crumble:
- 2 diced apples
- 1/2 cup quick oats
- 1 tsp cinnamon
- 1 tbsp honey
INSTRUCTIONS:
- Pre heat oven to 180degrees
- In a large bowl whisk the olive oil, eggs and vanilla together.
- Add in the smashed bananas.
- Grate your apples and add to the mix.
- Whisk in your brown sugar
- In the same bowl add in the flour, cinnamon, bicarb soda, salt and combine.
- Grease and line a rectangle baking tray
- Pour your mixture into the tray
- To make the crumble
- Dice your apples (you can peel them if you wish)
- In a small bowl combine your diced apples, oats, cinnamon and honey
- Spread your crumble over your loaf
- Bake in the oven for 40-50 minutes or until a skewer comes out clean
- Let cool before slicing OR cut warm and serve crumbled with yogurt or ice cream
