APPLE CRUMBLE LOAF

Cook time: 40-50 minutes

INGREDIENTS 

  • 1/4 cup olive oil 
  • 2 ripe bananas 
  • 1 tsp vanilla extract 
  • 2 grated apples 
  • 1/2 cup brown sugar 
  • 1 1/2 cups self-raising flour 
  • 1 tsp bicarbonate soda 
  • 1 1/2 tsp cinnamon 
  • Pinch of salt 
  • Crumble:
  • 2 diced apples 
  • 1/2 cup quick oats 
  • 1 tsp cinnamon 
  • 1 tbsp honey 

INSTRUCTIONS:

  1. Pre heat oven to 180degrees 
  2. In a large bowl whisk the olive oil, eggs and vanilla together. 
  3. Add in the smashed bananas. 
  4. Grate your apples and add to the mix. 
  5. Whisk in your brown sugar 
  6. In the same bowl add in the flour,  cinnamon, bicarb soda, salt and combine. 
  7. Grease and line a rectangle baking tray 
  8. Pour your mixture into the tray 
  9. To make the crumble 
  10. Dice your apples (you can peel them if you wish)
  11. In a small bowl combine your diced apples, oats, cinnamon and honey 
  12. Spread your crumble over your loaf 
  13. Bake in the oven for 40-50 minutes or until a skewer comes out clean 
  14. Let cool before slicing OR cut warm and serve crumbled with yogurt or ice cream
