INGREDIENTS
Base:
- 2 cups quick oats
- 2 scoops @trueprotein vanilla WPI
- 1/3 cup honey
- 1/3 cup crunchy peanut butter
Caramel:
- 1 1/3 cups pitted dates
Topping:
- 3/4 block dark chocolate
- A sprinkle of salt (optional)
INSTRUCTIONS:
- Begin by boiling your kettle.
- Place the pitted dates in a bowl and pour 1 cup of boiling water over them. Set aside to soften.
- In a large mixing bowl, combine the quick oats and protein powder.
- Fold in the honey and crunchy peanut butter until well mixed.
- Press the mixture firmly into a lined square baking tray and set aside.
- Once the dates have softened, transfer them to a blender. If your blender struggles, add 1-2 tablespoons of the date-soaking water to help it blend smoothly. If you have a good blender, try blending the dates without adding water first. Once smooth, spread the date mixture over the oat layer.
- Melt the dark chocolate in the microwave and pour it over the date layer, spreading it evenly.
- If desired, sprinkle a little salt on top.
- Place the tray in the freezer and let it set until hardened.
- Store in the freezer for later enjoyment!
