PESTO TOFU NOURISH BOWLS

COOK TIME: 15 MINUTES

INGREDIENTS

  • 350g pasta of choice (I used gluten free)
  • 1 jar pesto
  • 2 bunches broccolini, chopped
  • 2 tomatoes, chopped (or 1 punnet cherry tomatoes)
  • 1 packet rocket
  • 250g firm tofu, diced (or you can use chicken)
  • 1 tbsp coconut aminos
  • Parmesan cheese, to serve

INSTRUCTIONS

  1. Dice the tofu and drizzle with coconut aminos. Cook in the air fryer for 10–15 minutes until crispy. (I slightly burnt mine at 15 mins lol, so maybe start checking around 10 minutes.)
  2. Cook the pasta according to packet instructions. When the pasta has about 2 minutes remaining, add the chopped broccolini and cook until tender.
  3. Drain the pasta and broccolini, then stir through the pesto until well combined.
  4. Divide a handful of rocket between 4 containers, then evenly distribute the pesto pasta and broccolini mix.
  5. Top each container with the crispy tofu, chopped tomato, and a sprinkle of parmesan cheese.

Perfect for a post-training lunch because it’s ticking all the boxes. Carbs for energy, protein for recovery, healthy fats, and plenty of colour 🫶
