TURKISH EGG BAGEL

PRE TIME: 15 MINUTES

COOK TIME: 10 MINUTES

INGREDIENTS

  • 1 boiled bagel 
  • 4 tbsp @yopro natural yoghurt 
  • 1/4-1/2 tsp minced garlic 
  • 2 eggs 
  • 4 slices of chilli halloumi 
  • 1/2 cup chopped cherry tomatoes 
  • 1/2 cup mixed rocket and spinach 
  • At least 1 tbsp freshly chopped mint 
  • 1 tbsp chilli honey 
  • Salt and pepper 
  • Optional: Chilli olive oil for drizzling instead of chilli honey :)

INSTRUCTIONS

1. Start by chopping your tomatoes and mint, then set them aside. 

2. In a bowl, combine the yoghurt and garlic and set it aside. Start with less garlic and add more to your taste. 

3. Toast your bagel OR bread

4. In a medium-sized pan, fry the halloumi and eggs until they’re cooked to your liking. I drizzled a bit of extra honey on the halloumi as well. 

5. Spread the garlic yoghurt sauce over your bagel, then top it with the halloumi and eggs. 

6. Sprinkle over your greens, tomatoes, and mint. 

7. Finish with extra chilli honey and a pinch of salt and pepper to taste. Enjoy! :)
