
Blueberry Oat Slice
PREP TIME: 15 MINUTES
COOK TIME: 30-60 MINUTES (DEPENDS ON OVEN)
INGREDIENTS
- 2 eggs
- 1 cup YoPro vanilla yogurt (I ended up doing half vanilla half strawberry as ran out of vanilla lol)
- 2 tsp vanilla extract
- ½ cup maple syrup
- ¼ cup milk of choice
- 1 cup blueberries
- 1 cup quick oats
- 1 cup wholemeal self-raising flour (I used GF)
- ¼ cup desiccated coconut
- 2 tsp cinnamon
- 1 tsp baking soda
- Pinch of salt
Toppings :)
- Extra ½ cup blueberries
- Desiccated coconut
- Drizzle of maple syrup
INSTRUCTIONS
- In a mixing bowl or stand mixer, whisk together the eggs, maple syrup, milk, vanilla, and yogurt until smooth.
- Add the oats, flour, coconut, cinnamon, baking soda, and salt, then stir to combine.
- Gently fold through the blueberries.
- Line a rectangular baking tray and pour the mixture in evenly.
- Top with extra blueberries, a sprinkle of coconut, and a drizzle of maple syrup.
- Bake for 30–35 minutes, or until a skewer comes out clean.
I love having these warm with some extra yogurt when I’m at home — or as a pre-training snack with a coffee (such a good combo and sit really well in the tummy for me whilst I get back into some training!).
