Sweet Chilli Chicken Plates

PREP TIME: 10 MINUTES

COOK TIME: 20 MINUTES

INGREDIENTS 

Sweet Chilli Chicken

  • 1 kg diced chicken breast
  • ½ cup light sweet chilli sauce
  • 1 tbsp olive oil
  • 1–2 tbsp soy sauce
  • 1 tbsp minced garlic + ginger
  • Juice of ½ lime
  • Salt + pepper

Pumpkin Mash

  • 1 whole butternut pumpkin
  • 1–2 garlic cloves
  • Drizzle of olive oil

Salad (use whatever you’ve got – I used):

  • Lettuce
  • Rocket
  • Tomato
  • Capsicum
  • Cucumber
  • Feta
  • Lemon juice

INSTRUCTIONS

  1. Mix chicken with marinade ingredients. (I cooked mine straight away, but 1–2 hrs or overnight would be even better… I was too impatient 😂).
  2. Air fry chicken at 200°C for 15 mins.
  3. Peel + dice pumpkin, then boil until soft.
  4. In a pan, heat olive oil + garlic, add drained pumpkin, and cook for 5 mins until slightly crispy. Mash lightly with your spatula.
  5. Toss together your salad.
  6. Plate up with chicken, pumpkin mash + salad.
