Sweet Chilli Chicken Plates

INGREDIENTS
Sweet Chilli Chicken
- 1 kg diced chicken breast
- ½ cup light sweet chilli sauce
- 1 tbsp olive oil
- 1–2 tbsp soy sauce
- 1 tbsp minced garlic + ginger
- Juice of ½ lime
- Salt + pepper
Pumpkin Mash
- 1 whole butternut pumpkin
- 1–2 garlic cloves
- Drizzle of olive oil
Salad (use whatever you’ve got – I used):
- Lettuce
- Rocket
- Tomato
- Capsicum
- Cucumber
- Feta
- Lemon juice
INSTRUCTIONS
- Mix chicken with marinade ingredients. (I cooked mine straight away, but 1–2 hrs or overnight would be even better… I was too impatient 😂).
- Air fry chicken at 200°C for 15 mins.
- Peel + dice pumpkin, then boil until soft.
- In a pan, heat olive oil + garlic, add drained pumpkin, and cook for 5 mins until slightly crispy. Mash lightly with your spatula.
- Toss together your salad.
- Plate up with chicken, pumpkin mash + salad.
