Rice Paper Burritos

PREP TIME: 10-15 MINUTES

COOK TIME: 0 (A PART FROM CHICKEN OR YOU CAN USE BBQ COOKED CHOOK)

INGREDIENTS:

  • 2 rice paper sheets
  • 1 cup cooked chicken
  • 1 cup rainbow coleslaw mix
  • A big handful of fresh coriander
  • ¼ avocado (I forgot mine 😭)

For the sauce (this was sooooo good and key to making this yummy)

  • 1 tbsp PB powder or natural peanut butter
  • 1 tbsp light sweet chilli sauce
  • 1 tbsp soy sauce
  • ½ tsp minced garlic and ginger (or more to taste)
  • Squeeze of lemon juice

INSTRUCTIONS:

  1. Soak your rice paper sheets in warm water and place them on a chopping board, overlapping in a clover shape.
  2. Layer in the coleslaw, chicken, coriander and avo.
  3. Fold it up like a burrito — don’t worry if it’s a bit messy, it still tastes amazing.
  4. Mix all the sauce ingredients in a small bowl and you’re good to go!

NOTES:

I was craving rice paper rolls but honestly couldn’t be bothered rolling a million of them — so I made one jumbo version instead, and it turned out so easy and was a perfect fresh and light lunch. I was meant to add avocado but I forgot it and only realised once I had eaten half of it lol but 100% recommend adding avo for some healthy fats.
