20 MINUTE GREEK BOWL

Cook time: 20 minutes

Serves 3: Perfect for lunch meal prep

INGREDIENTS 

  • 1 x 500-gram packet of lemon chicken 
  • 3 x wholemeal pita pocket 
  • 6 baby potatoes
  • 1/4 butternut pumpkin
  • 1 tbsp olive oil
  • 1 tbsp Greek seasoning*

Quick Greek Salad:

  • 1 Lebanese cucumber 
  • 1 large tomato 
  • 1/4 red onion
  • 1 cup chopped lettuce
  • 1/2 lemon 
  • 2 tbsp chopped mint
  • SnP

Bowl add-ons:

  • 1 tbsp garlic Hummus
  • 1 tbsp tzatziki 

INSTRUCTIONS:

  1. Dice your potato and pumpkin into small squares (1 cm size) coat in olive oil and your Greek seasoning and add to your air fryer for 20 minutes

  2. Cook your lemon chicken (I either add mine to their fryer with the veggies cooking for 6 minutes on either side or you can pan fry) 

  3. Dice your Greek salad ingredients and combine In a medium-sized bowl with lemon juice and salt and pepper 

  4. Toast your pita pocket in the toaster, sandwich press or pan until hot and crispy on the outsides

  5. Once your veggies and chicken are cooked, evenly dish all the ingredients into a bowl or containers for meal prep

NOTES:

*I love using Mingles Greek seasoning

You can store your Greek salad and dips separately from the chicken, veggies and pita if you want to heat them.  

The measurements and ingredients can easily altered to suit your taste.
