TURKISH PASTA
PREP TIME: 20 MINUTES
COOK TIME: 30 MINUTES
INGREDIENTS
450g pasta of your choice
Meat Mixture:
- 1 x 500g packet extra lean beef mince
- 250g sliced mushrooms
- 1 small brown onion (diced)
- 1 tsp salt
- 1 tsp pepper
- 2 tsp curry powder
- 2 tsp sweet paprika
- 1 tbsp mixed herbs (I use Mingles)
Yoghurt Sauce:
- 1 full cup @yopro natural yoghurt
- 1 tbsp minced garlic
To Serve:
- 2 bunches broccolini
- 1 punnet cherry tomatoes
- 2 cups spinach
- Fresh parsley
- 1 tbsp fetta
Sauce:
- 2 tbsp extra virgin olive oil
- 2 tsp sweet paprika
INSTRUCTIONS
- Cook your pasta according to the packet instructions.
- Heat a large pot over medium heat, then add in your diced onion and brown slightly.
- Add in your mince and break it apart into small chunks.
- Sprinkle in your spices and mix through. Let it cook over medium heat while you prepare the rest.
- For the yoghurt sauce, combine your yoghurt with the minced garlic and set aside.
- With a few minutes left on your pasta, chop up the broccolini and add it to the pot to blanch while the pasta finishes cooking. Drain both together and set aside.
- Dice your cherry tomatoes and set aside for serving.
- Mix your olive oil and paprika in a small bowl and set aside.
- Once everything is cooked, layer your bowl with a handful of spinach, the pasta and broccolini, meat mixture, yoghurt sauce, tomatoes, parsley, and olive oil sauce.
- This was sooo yummy, fresh and easy for meal prep as you can eat in cold!
NOTES
Feel free to add any extra vegetables to the meat mixture or serve with veggies of your liking.
