SWEET SALMON BOWL

Serves 1
INGREDIENTS
- 1 salmon fillet
- 1 cup cooked rice
- 1 tbsp low-fat kewpie mayo
- 1/2 lime
Salmon marinade:
- 1 tbsp chilli honey
- 1 tbsp soy sauce
- 1 tsp garlic olive oil
- 1 tsp minced garlic.
Mango salad:
- 1/2 diced mango
- 1 cup dice cos lettuce
- 1/2 grated carrot
- 1/2 juice of lime
INSTRUCTIONS:

If cooking rice, do say now following packet instructions. If you are using packet rice skip to step 2.

In a small bowl whisk marinade ingredients together

Add in your salmon and set aside

Prepare your mango salad and set aside

Place baking paper down in your air fryer and then your salmon

Bake for 8 minutes at 200 degrees

Once your salmon is cooked assemble your bowl

Place your rice and salad in, followed by your salmon

Top with kewpie mayo, a squeeze of lime juice and SnP
NOTES:
The measurements and ingredients can easily altered to suit your own taste or to cater for more mouths. Simple double the ingredients.
I used mango when it was in season but you can easily swap this out for a seasonal fruit or more veggies.
