Smashed Mexican Burritos/Tacos
PREP TIME: 10 MINUTES
COOK TIME: 10 MINUTES
These were so delicious, super fun to make, and absolutely packed with flavour!
INGREDIENTS:
- 500g extra lean beef mince (approx. 2–3 tbsp per wrap)
- 1 packet of wraps or tortillas of your choice
- 1 tsp minced garlic (per wrap)
- 1 tbsp taco seasoning (I used @mingles – per wrap)
- 1 slice Bega High Protein cheese (per wrap)
To Serve (toppings):
- Natural yoghurt
- Salsa
- Diced cucumber
- Chopped tomato
- Fresh coriander
- Pickled onions
INSTRUCTIONS:
- Preheat a large non-stick pan over medium heat.
- Shape the mince: Grab 2–3 tablespoons of beef mince and press it into a thin layer directly onto your wrap — covering most of the surface.
- Season: Sprinkle taco seasoning over the mince side.
-
Pan-fry:
Carefully place the wrap into the pan mince side down.
Spread 1 tsp of minced garlic across the exposed wrap side.
Cook for 3–5 minutes until the meat is browned and cooked through. -
Flip it:
Flip the burrito so the wrap side is now facing the pan. (I used the plate flip method for ease, but if you’ve got spatula skills — go for it!) -
Melt the cheese:
With the meat side up, add a slice of cheese on top. Cover with a lid and let it melt for a minute or two. -
Serve it up:
Slide onto a plate and load it with your favourite toppings — yoghurt, salsa, crunchy veg, herbs, pickles — whatever you've got on hand!
NOTES:
- These work great with chicken mince or plant-based mince too.
- You can meal prep the seasoned mince ahead to save time midweek.
