Potato Nachos

I had some leftover Mexican beef mince and was craving nachos… but had no corn chips in sight! So, I made my own potato chips instead, and they turned out sooo crispy and yum.

INGREDIENTS

  • 1–2 large potatoes
  • 1-2 tbsp mingles Mexican seasoning
  • A handful of light grated cheese

Mexican Mince (my version):

  • Extra lean beef mince
  • 1 brown onion
  • Lentils
  • Finely diced carrot + zucchini
  • ½ cup Mingles Mexican seasoning
  • ½ cup water

Toppings:

Avocado, Tomato, Cucumber, Red onion, Natural yogurt, Salsa, Coriander, Fresh lemon juice

INSTRUCTIONS

  1. Finely slice your potatoes.
  2. Season with Mexican spice, a sprinkle of cheese, and a light spray of olive oil.
  3. Air fry at 200°C for 15–20 minutes, shaking halfway.
  4. Top with your Mexican mince and fresh toppings, and enjoy!
