
Potato Nachos
I had some leftover Mexican beef mince and was craving nachos… but had no corn chips in sight! So, I made my own potato chips instead, and they turned out sooo crispy and yum.
INGREDIENTS
- 1–2 large potatoes
- 1-2 tbsp mingles Mexican seasoning
- A handful of light grated cheese
Mexican Mince (my version):
- Extra lean beef mince
- 1 brown onion
- Lentils
- Finely diced carrot + zucchini
- ½ cup Mingles Mexican seasoning
- ½ cup water
Toppings:
Avocado, Tomato, Cucumber, Red onion, Natural yogurt, Salsa, Coriander, Fresh lemon juice
INSTRUCTIONS
- Finely slice your potatoes.
- Season with Mexican spice, a sprinkle of cheese, and a light spray of olive oil.
- Air fry at 200°C for 15–20 minutes, shaking halfway.
- Top with your Mexican mince and fresh toppings, and enjoy!
