Lime Coconut Chicken

PREP TIME: 5 MINUTES

COOK TIME: 20-30 (DEPENDING ON YOUR RICE COOKER)

INGREDIENTS

  • 500g diced chicken breast
  • 1 cup basmati rice
  • 1–2 tbsp Ayam’s green curry paste
  • 1 tbsp minced garlic & ginger
  • ¾ cup hot water
  • 2 x 470ml cans light coconut milk
  • 1 zucchini, sliced
  • 1 bunch broccolini
  • 1 bunch bok choy
  • Zest of 2 limes
  • Juice of 1 lime
  • Coriander & sesame seeds to serve

INSTRUCTIONS

  1. In your rice cooker, combine curry paste, garlic, ginger and hot water. Stir until smooth.
  2. Add rice, coconut milk, lime zest and juice, then stir again.
  3. Mix in the chicken and veggies.
  4. Switch the rice cooker on and let it cook through.
  5. Once done, fluff and stir. Serve topped with coriander, sesame seeds and a squeeze of fresh lime.

NOTES

I had a bunch of fresh veggies from my farmers pick box and needed a quick meal to get me through a busy few days. I wasn’t craving a full curry, but wanted something a bit lighter, so I tossed everything into the rice cooker and it hit the spot :)
