Lemon Trout and Garlic Veg

PREP TIME: 5 MINUTES

COOK TIME: 20 MINUTES

INGREDIENTS

  • 1 piece wild-caught trout (I got mine from the farmers market in Narrabeen)
  • ½ lemon
  • 3–4 potatoes
  • 1 cup green beans
  • 1 head bok choy
  • Salt and pepper
  • Garlic-infused olive oil

INSTRUCTIONS

  1. Spray your air fryer with olive oil and place the trout skin-side down.
  2. Slice two pieces of lemon and lay them on top of the trout. Season with salt and pepper.
  3. Air fry at 200°C for 15 minutes (or until cooked through).
  4. While the fish cooks, peel and slice your potatoes. Steam for around 15 minutes, or roast if you prefer a crispier option.
  5. For the greens, heat a medium pan over medium heat with a drizzle of garlic-infused olive oil (or olive oil + fresh garlic).
  6. Add the green beans and bok choy, cooking until tender. You can add a splash of water to help them steam.
  7. Serve the trout with the greens and potatoes, and squeeze the remaining lemon over the top before serving.
