Lemon Trout and Garlic Veg

INGREDIENTS
- 1 piece wild-caught trout (I got mine from the farmers market in Narrabeen)
- ½ lemon
- 3–4 potatoes
- 1 cup green beans
- 1 head bok choy
- Salt and pepper
- Garlic-infused olive oil
INSTRUCTIONS
- Spray your air fryer with olive oil and place the trout skin-side down.
- Slice two pieces of lemon and lay them on top of the trout. Season with salt and pepper.
- Air fry at 200°C for 15 minutes (or until cooked through).
- While the fish cooks, peel and slice your potatoes. Steam for around 15 minutes, or roast if you prefer a crispier option.
- For the greens, heat a medium pan over medium heat with a drizzle of garlic-infused olive oil (or olive oil + fresh garlic).
- Add the green beans and bok choy, cooking until tender. You can add a splash of water to help them steam.
- Serve the trout with the greens and potatoes, and squeeze the remaining lemon over the top before serving.
