CRIPSY FISH BOWL

PREP TIME: 10 MINUTES

COOK TIME: 15 MINUTES

INGREDIENTS

  • 2 pieces of crumbed fish (I used Birds Eye 50% less oil whiting)
  • 1 cup of rice

Side salad:

  •   1 cup Lettuce
  •   1/2 cup Mixed cabbage
  •   1/2 cup diced Tomatoes
  •   1/2 Cucumber
  •   1/2 a Mango

Sauce:

  • 2 tbsp Greek yogurt
  • 1 tbsp sweet chili sauce
  • 1 tbsp light mayo
  • 1/2 lemon, juiced
  • To Serve:
  • Extra lemon wedges, sesame seeds, and pickled onions

INSTRUCTIONS

1. Cook the fish in an air fryer for 12-15 minutes at 200 degrees Celsius.

2. Prepare the rice or use pre-cooked packet rice.

3. In a bowl, mix together the sauce ingredients.

4. Assemble the bowl with rice, salad, and fish, then drizzle with sauce and top with pickled onions.
