CHILLI CON CARNE

Prep time: 30 minutes
 

INGREDIENTS 

  • 1 tbsp extra virgin olive oil 
  • 1 brown onion 
  • 1 x 500gram packet of extra lean beef mince 
  • 2 x 400gram cans mixed beans 
  • 1 x 400gram can tin tomatoes 
  • 1 1/2 cups vegetable stock 
  • 1 tbsp tomato paste 
  • 2 x 35 gram sachets of mingles chilli con carne spice mix 
  • 1 x 500-gram packet of mushrooms 

Salsa:

  • 1 x 200-gram cherry tomatoes 
  • 1 large cucumber 
  • 1 medium capsicum 
  • 1/2 lemon 
  • Salt and pepper 

To serve:

  • Natural yogurt 
  • Avocado 
  • Coriander 
  • Corn chips (optional) 

INSTRUCTIONS:

  1. Prepare the Vegetables: Finely dice the onion and mushrooms.

  2. Sauté the Onions: Heat a large pan over medium heat with olive oil. Add the onions and sauté until golden brown.

  3. Cook the Mushrooms: Add the diced mushrooms and ½ cup of stock. Cover the pan and cook until the mushrooms are softened and have shrunk in size.

  4. Brown the Beef: Stir in the beef mince and tomato paste, cooking until the meat is browned.

  5. Season: Add the Mingle seasoning and mix until everything is well coated.

  6. Combine Ingredients: Add the canned tomatoes, beans, and any remaining stock. Cover the pan again.

  7. Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer until thickened.

  8. Serve: Enjoy with salsa, yogurt, avocado, and corn chips.
