CHICKEN NUGGETS

INGREDIENTS

  • 500 grams chicken breast mince
  • 1 medium carrot, grated
  • 1 medium zucchini, grated
  • 1 tablespoon minced garlic
  • 1 tablespoon BBQ seasoning
  • Salt and pepper to taste
  • 1 egg
  • 1 cup breadcrumbs
  • 1 tablespoon @mingles BBQ seasoning (for coating)

Dipping Sauce

  • 2 tablespoons of natural yogurt
  • 1 tablespoon of sweet chilli sauce

INSTRUCTIONS

1. Start by grating the carrot and zucchini.

2. In a large bowl, combine the grated carrot and zucchini with the chicken mince, minced garlic, and BBQ seasoning. Season with salt and pepper to taste.

3. Using a spoon, scoop out the mixture into your desired size (about 1 tablespoon works well) and set aside.

4. Lightly spray your air fryer basket with olive oil and arrange half of the nuggets in a single layer. Spray the tops of the nuggets with olive oil and cook at 200°C for 15 minutes, or until golden and cooked through.

5. Prepare the Dipping Sauce by combing the yogurt and sweet chilli in a small bowl

I love serving these either for dinner with a side of mash and steamed veg OR for lunch in a salad wrap/sanga
