
Chicken Massaman Curry

INGREDIENTS
- 1 jar Ayam Thai Massaman curry paste (195 gram)
- 1 kg diced chicken breast
- 1 kg frozen mixed winter vegetables
- 2 cans (400 ml each) light coconut milk
- 1 can (270 ml) light coconut cream (Ayam brand)
- 2 tablespoons natural peanut butter
- 2 tablespoons tomato paste
To serve:
- Basmati rice
- Lime juice
INSTRUCTIONS:
- Heat a large pot over medium heat and add the jar of curry paste, spreading it across the base of the pan.
- Add the diced chicken and sauté for about 5 minutes, or until the chicken turns mostly white.
- Add the tomato paste and mix well to combine with the chicken.
- Incorporate the mixed vegetables and stir to combine.
- Pour in the coconut milk and coconut cream, along with the peanut butter, mixing everything together thoroughly.
- Cover the pot and bring the mixture to a boil.
- Once it reaches a boil, reduce the heat and simmer for 5 minutes, then check to ensure the chicken is fully cooked.
Serve with basmati rice and a squeeze of lime juice.
NOTES:
Feel free to use beef chunks (you will just need to cook them longer)
