Chicken Massaman Curry

PREP TIME: 5 MINUTES 

COOK TIME: 20 MINUTES 

INGREDIENTS

  • 1 jar Ayam Thai Massaman curry paste (195 gram)
  • 1 kg diced chicken breast
  • 1 kg frozen mixed winter vegetables
  • 2 cans (400 ml each) light coconut milk
  • 1 can (270 ml) light coconut cream (Ayam brand)
  • 2 tablespoons natural peanut butter
  • 2 tablespoons tomato paste

To serve:

  • Basmati rice
  • Lime juice

INSTRUCTIONS:

  1. Heat a large pot over medium heat and add the jar of curry paste, spreading it across the base of the pan.
  2. Add the diced chicken and sauté for about 5 minutes, or until the chicken turns mostly white.
  3. Add the tomato paste and mix well to combine with the chicken.
  4. Incorporate the mixed vegetables and stir to combine.
  5. Pour in the coconut milk and coconut cream, along with the peanut butter, mixing everything together thoroughly.
  6. Cover the pot and bring the mixture to a boil.
  7. Once it reaches a boil, reduce the heat and simmer for 5 minutes, then check to ensure the chicken is fully cooked.

Serve with basmati rice and a squeeze of lime juice.

NOTES:

Feel free to use beef chunks (you will just need to cook them longer)
