CHICKEN GREEK PITAS

Cook time: 20 minutes

INGREDIENTS 

  • 1 packet chicken stir fry mix
  • 1 tbsp extra virgin olive oil
  • 2 tbsp Citrus pepper seasoning from @mingleseasoning
  • 1 packet of mint leaves
  • Homemade pita or store-bought pitas
  • Homemade pita recipe:
  • 2 cups self-raising flour
  • 1 cup natural yogurt
  • Salt and pepper
    Pickled cabbage/onions recipe: 
  • 1/2 red cabbage 
  • 1 red onion 
  • 4 tbsp red wine vinegar
  • 1 tsp salt 
  • 1 cup warm water 
    Homemade tzatziki or store-bought:
  • 1 small grated cucumber
  • 1 cup natural yogurt
  • 1 tbsp minced garlic
  • 1 tsp olive oil
  • 1 tbsp chopped fresh dill
  • Salt and pepper
  • Juice of 1 lemon
     

INSTRUCTIONS:

  1. Chop your cabbage and onion and combine with vinegar and water in a large bowl and set aside (this builds flavour the longer you leave it

  2. In a large bowl add your chicken and coat it in your oil and seasoning 

  3. Cook in the air fryer for 12 minutes at 180 degrees 

  4. Meanwhile, prepare your tzatziki ingredients combine in a bowl and set aside 

  5. Make your pita by combining your flour, yogurt and SnP in a bowl to form a dough 

  6. Knead and then roll out with a rolling pin

  7. Cut or roll into desired size pitas (I like little ones) 

  8. Pan fry your pita in olive oil until crispy on both sides 

  9. Layer your pita with tzatziki, chicken, pickled onion/cabbage and mint 

NOTES:

I am still working to perfect my pickled cabbage recipe and pita bread recipe but these were still both good :)
