BURGER TACOS

Cook time: 10 minutes

INGREDIENTS 

  • 500 gram Extra lean beef mince
  • 1 Packet of soft tacos
  • 5 large Potatoes
  • 1-2 Tomato
  • 1 large Cucumber
  • Lettuce
  • 1 onion
  • 1 cup grated light cheese
  • Burger sauce
  • 2 tbsp light mayo
  • 1 tbsp low sugar tomato sauce
  • 1 tsp mustard
  • 2 tbsp chopped pickles
  • 2 tsp pickle juice (this is key)
  • Salt and pepper

INSTRUCTIONS:

  1. Thinly slice your potatoes and season with olive oil and salt and pepper
  2. Cook in an air fryer on 200 degrees for 20 minutes mixing halfway through
  3. Combine all of your sauce ingredients and set side
  4. Chop your onion and In a pan fry with olive oil and set aside
  5. Chop up your veggies and set aside
  6. Lay out your soft tacos and add 2 tbsp of your beef mince into the centre of your taco
  7. Flatten your mince with your hands or a spatula
  8. Spray your pan with olive oil or drizzle with olive and add your beef taco beef side down and until cooked through
  9. Flip your taco and sprinkle your grated cheese on top
  10. Leave for a few minutes or until melted
  11. Take your tacos off the heat
  12. Top with your chopped veggies, lettuce leaves and burger sauce

NOTES:

The measurements and ingredients can easily altered to suit your own taste or cater for more people.
