BURGER TACOS

INGREDIENTS
- 500 gram Extra lean beef mince
- 1 Packet of soft tacos
- 5 large Potatoes
- 1-2 Tomato
- 1 large Cucumber
- Lettuce
- 1 onion
- 1 cup grated light cheese
- Burger sauce
- 2 tbsp light mayo
- 1 tbsp low sugar tomato sauce
- 1 tsp mustard
- 2 tbsp chopped pickles
- 2 tsp pickle juice (this is key)
- Salt and pepper
INSTRUCTIONS:
- Thinly slice your potatoes and season with olive oil and salt and pepper
- Cook in an air fryer on 200 degrees for 20 minutes mixing halfway through
- Combine all of your sauce ingredients and set side
- Chop your onion and In a pan fry with olive oil and set aside
- Chop up your veggies and set aside
- Lay out your soft tacos and add 2 tbsp of your beef mince into the centre of your taco
- Flatten your mince with your hands or a spatula
- Spray your pan with olive oil or drizzle with olive and add your beef taco beef side down and until cooked through
- Flip your taco and sprinkle your grated cheese on top
- Leave for a few minutes or until melted
- Take your tacos off the heat
- Top with your chopped veggies, lettuce leaves and burger sauce

The measurements and ingredients can easily altered to suit your own taste or cater for more people.
