BEEF CHOW MEIN

PRE TIME: 1 MINUTE

COOK TIME: 20 MINUTES

INGREDIENTS

  • 500g extra lean beef mince
  • 1 packet of shredded cabbage
  • 2 tbsp soy sauce
  • 2 tbsp sweet chili sauce
  • 1 tbsp minced garlic
  • 1 packet of Chow Mein seasoning (from Mingles)

To Serve:

  • 1 cup basmati rice (cooked with 2 cups of water in a rice cooker)
  • Fresh lemon juice

INSTRUCTIONS

  1.  In a large pot, cook the beef mince over medium heat until browned.
  2. Add soy sauce, sweet chili sauce, and minced garlic to the beef and stir well.
  3. Toss in the shredded cabbage and cook on low heat until the cabbage softens.
  4. While the beef and cabbage are cooking, prepare the rice by cooking 1 cup of basmati rice in 2 cups of water (use a rice cooker for convenience).
  5. Plate the rice, top with the beef and cabbage mixture, and squeeze fresh lemon juice over the dish for extra flavor.

NOTES

Feel free to mix up the protein = I sometimes use extra lean pork mince, chicken breast mince or tofu
