Beef Cabbage Bowls

INGREDIENTS 

  • 2 tablespoons extra virgin olive oil
  • 6 spring onions (white parts only, about 3 cm)
  • 500 grams extra lean beef mince
  • 1 tablespoon minced garlic
  • 1 whole Chinese cabbage
  • 1/2 cup Cheng's crispy noodle salad dressing
  • 1/4 cup soy sauce

To Serve:

  • Basmati rice
  • Crispy noodles
  • Sesame seeds
  • Lemon wedges
  • Extra vegetables (I used broccolini)

INSTRUCTIONS:

1. Heat a large pan over medium heat.

2. Finely chop the spring onions and add them to the heated pan along with the olive oil.

3. Sauté for a couple of minutes until fragrant, then add the minced beef and garlic. Cook until the beef is nearly browned throughout.

4. Finely slice the Chinese cabbage and add it to the pan, along with the noodle dressing and soy sauce.

5. Cover with a lid and cook until the cabbage is completely soft, about 10-15 minutes. Cooking it longer enhances the flavour.

6. Serve the beef and cabbage mixture over basmati rice, garnished with broccolini, crispy noodles, sesame seeds, and a squeeze of lemon juice.
