
Chunky Oat Pancakes

Makes 2 large pancakes
INGREDIENTS
- 1 egg
- 1 small banana
- ¾ cup rolled oats
- ¾ scoop True Protein WPI
- A dash of cinnamon (or as much as you like)
- 1–2 tbsp milk
- 2 squares of chocolate (or more, no judgment 😄)
To serve:
- YoPro vanilla yoghurt
- Berries
- Honey
- Peanut butter
INSTRUCTIONS
- In a bowl, whisk the egg and mash in the banana—I left mine a little chunky for texture.
- Add the oats, protein powder, and cinnamon, then mix to combine.
- Add the milk one tablespoon at a time until the mixture reaches a slightly wet, spoonable consistency.
- Heat a pan over medium heat and cook the pancakes for a few minutes on each side, or until they’re golden and you can slide a spatula underneath easily.
- I added the chocolate pieces just before flipping so they melted into the pancakes without burning on the pan.
Top with whatever you love—yoghurt, berries, honey, PB… go wild x
