Chunky Oat Pancakes

COOK TIME: 5-10 MINS

Makes 2 large pancakes

INGREDIENTS

  • 1 egg
  • 1 small banana
  • ¾ cup rolled oats
  • ¾ scoop True Protein WPI
  • A dash of cinnamon (or as much as you like)
  • 1–2 tbsp milk
  • 2 squares of chocolate (or more, no judgment 😄)

To serve:

  • YoPro vanilla yoghurt
  • Berries
  • Honey
  • Peanut butter

INSTRUCTIONS

  1. In a bowl, whisk the egg and mash in the banana—I left mine a little chunky for texture.
  2. Add the oats, protein powder, and cinnamon, then mix to combine.
  3. Add the milk one tablespoon at a time until the mixture reaches a slightly wet, spoonable consistency.
  4. Heat a pan over medium heat and cook the pancakes for a few minutes on each side, or until they’re golden and you can slide a spatula underneath easily.
  5. I added the chocolate pieces just before flipping so they melted into the pancakes without burning on the pan.

Top with whatever you love—yoghurt, berries, honey, PB… go wild x
