
Chocolate Scrambled Oats

INGREDIENTS
- 1 egg
- 1 small banana
- ½ cup oats
- 1 scoop chocolate WPI protein powder
- 1 tsp cacao powder
- Pinch of salt
- 1 piece of dark chocolate (or as much as you like)
Toppings
- Vanilla YoPro yoghurt
- Fresh berries
- Maple syrup or honey
- 1/2 tbsp peanut butter
INSTRUCTIONS
- In a small bowl, whisk the egg.
- Mash in the banana until mostly smooth.
- Add the oats, cacao powder, salt and protein powder, and mix well to combine.
- Heat a non-stick pan over medium heat.
- Pour in the mixture and use a spatula to continuously stir and break it up as it cooks – you’re aiming for a scrambled or crumbly texture.
- Just before serving, stir through the dark chocolate so it begins to melt.
- Serve warm and top with a dollop of vanilla YoPro yoghurt and a handful of berries.
