BREKO BAGEL

INGREDIENTS
- 1 boiled bagel
- 2 eggs
- 2-3 slices of bacon, turkey or ham
- 1 cup spinach
- 1/2 avocado
- 1 tbsp Dijon mayo
- 1 tbsp chilli jam
- 1 tbsp tomato sauce
INSTRUCTIONS:
- Toast your bagel
- In a large non stick pan fry your bacon (or meat of choice)
- Once this is almost cooked, push to the side of your pan and add your eggs
- Cook to your liking
- Layer your bagel with avocado and Dijon mayo
- Add your spinach, eggs and bacon
- Top with chilli jam, dijon mayo, tomato sauce and salt and pepper
NOTES:
Bagel of choice: I love the boiled bagels by 'Jesse's' brand from Coles/Woolworths
*You can either use turkey, ham or short cut bacon: I use whatever I have on hand
