CLASSIC BANANA BREAD

Bake time: 50 minutes
Makes 8-10 slices
INGREDIENTS
- 1/4 cup extra virgin olive oil
- *1/2 cup maple syrup
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup unsweetened almond milk
- 2 large bananas
- 1 1/2 cups wholemeal self-raising flour
- 1/2 cup almond meal
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1 tsp bicarb soda
- Pinch of salt
INSTRUCTIONS:
- Preheat oven to 180 degrees Celsius
- In a large bowl whisk the olive oil, maple syrup and eggs together.
- Add in the almond milk and vanilla and whisk
- Add in the smashed bananas.
- In the same bowl add in the flour, almond meal, cinnamon, sugar, bicarb soda, salt and combine.
- Line a loaf tin with baking paper and pour in your mixture
- Bake for 50 minutes or until golden and cooked through
NOTES:
You can store in an airtight container in the fridge.
Below you can see how I turn my banana bread into an everyday balanced snack. There is nothing wrong with having it on its own (which i still do) but when I want a filling nutritious snack I like to pair it with some protein yogurt or peanutbutter and berries.
Sugar free maple syrup also works in this recipe!
