BANANA CHOC CHIP COOKIES

Bake time: 15 minutes
Makes 12-15 cookies
INGREDIENTS:
- 1/4 cup olive oil
- 1 egg
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1 ripe banana
- 1/2 cup brown sugar
- 1 1/2 cups wholemeal plain flour
- 1/2 cup quick oats
- 1 tsp cinnamon
- 1/2 tsp bicarb soda
- 1/2 tsp baking powder
- Pinch of salt
- 3/4 cup chocolate chips chips*
INSTRUCTIONS:
- Preheat your oven to180 degrees
- In a large bowl, mash your banana then whisk in your olive oil, egg, vanilla and milk.
- Whisk in your sugar.
- Add your dry ingredients and combine
- Fold in your chocolate chips.
- Line a baking tray with baking paper
- Scoop roughly 2tbsp sized balls and spread evenly across your tray
- Bake for 15 minutes or until golden brown.
NOTES:
You can store in an airtight container in the fridge for up to 6 days
* You can swap out the choc chips for sultanas or chopped nuts for a more breakfast style cookie or I love doing a combination of both
