TOFU PAD THAI

Prep time: 10 minutes
 
Cook time: 20 minutes

INGREDIENTS 

  • 1 packet pad Thai noodles
  • 1 brown onion
  • 1 packet of firm tofu 

Marinade:

  • 1 tbsp sesame oil
  • 2 tbsp light soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp peanut butter
  • 1 tbsp sweet chilli sauce
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger


Veggies:

  • 1 carrot
  • 1 bunch broccolini
  • 1/2 red capsicum
  • 1 cup spinach
  • Serve with shallots, lemon and sesame seeds 

INSTRUCTIONS:

  1. Dice your tofu into small squares

  2. Chop up all of your veggies and set aside 

  3. In a small bowl whisk together all of the sauce ingredients and set aside 

  4. Boil your water and cook your noodles following the packet instructions

  5. In a large pan, add 1 tbsp of marinade with your onion and fry until brown

  6. Add your tofu and cook until brown.

  7. Add in your veggies and cook for 5 minutes.

  8. Add in your sauce and combine.

  9. Once the noodles are cooked, drain them and mix them into the veggie tofu mixture until coated evenly.

  10. Let that cook on low for a couple of minutes.
    Serve with shallots, lemon and sesame seeds :)

NOTES:

The measurements and ingredients can easily altered to suit your own taste aka you can use whatevr veggies you want
