TOFU PAD THAI
Prep time: 10 minutes
Cook time: 20 minutes
INGREDIENTS
- 1 packet pad Thai noodles
- 1 brown onion
- 1 packet of firm tofu
Marinade:
- 1 tbsp sesame oil
- 2 tbsp light soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp peanut butter
- 1 tbsp sweet chilli sauce
- 1 tbsp minced garlic
- 1 tbsp minced ginger
Veggies:
- 1 carrot
- 1 bunch broccolini
- 1/2 red capsicum
- 1 cup spinach
- Serve with shallots, lemon and sesame seeds
INSTRUCTIONS:

Dice your tofu into small squares

Chop up all of your veggies and set aside

In a small bowl whisk together all of the sauce ingredients and set aside

Boil your water and cook your noodles following the packet instructions

In a large pan, add 1 tbsp of marinade with your onion and fry until brown

Add your tofu and cook until brown.

Add in your veggies and cook for 5 minutes.

Add in your sauce and combine.

Once the noodles are cooked, drain them and mix them into the veggie tofu mixture until coated evenly.

Let that cook on low for a couple of minutes.
Serve with shallots, lemon and sesame seeds :)
NOTES:
The measurements and ingredients can easily altered to suit your own taste aka you can use whatevr veggies you want
