TOFU MISO NOODLE SOUP
Prep time: 30 minutes
INGREDIENTS
- 1 x 400gram packet of firm tofu
- 2L bone broth OR vegetable broth to keep plant-based
- 2 tbsp miso paste
- 2 cups water
- 1 x 250-gram packet of ramen noodles
- 500 grams mixed frozen vegetables (feel free to use more)
- Mingles sweet chilli sauce to serve on top
INSTRUCTIONS:

Heat up a large pot with olive oil.

Dice your tofu and add to the pan.

Fry for a few minutes.

Add in your miso paste, broth and water and mix in.

Bring to the boil.

Once boiling, add in your ramen noodles and vegetables.

Let cook for 5 minutes or until the noodles are cooked.

Feel free to add more miso if you want a stronger flavour (I liked mine subtle).

Serve and top with mingles sweet chilli sauce.
