TOFU MISO NOODLE SOUP

Prep time: 30 minutes

INGREDIENTS 

  • 1 x 400gram packet of firm tofu 
  • 2L bone broth OR vegetable broth to keep plant-based 
  • 2 tbsp miso paste 
  • 2 cups water 
  • 1 x 250-gram packet of ramen noodles 
  • 500 grams mixed frozen vegetables (feel free to use more) 
  • Mingles sweet chilli sauce to serve on top 

INSTRUCTIONS:

  1. Heat up a large pot with olive oil. 

  2. Dice your tofu and add to the pan. 

  3. Fry for a few minutes. 

  4. Add in your miso paste, broth and water and mix in. 

  5. Bring to the boil. 

  6. Once boiling, add in your ramen noodles and vegetables. 

  7. Let cook for 5 minutes or until the noodles are cooked. 

  8. Feel free to add more miso if you want a stronger flavour (I liked mine subtle). 

  9. Serve and top with mingles sweet chilli sauce.
