FALAFEL TACOS
Prep time: 10 minutes
Cook time: 15 minutes
INGREDIENTS

1 packet of Falafels of choice ( I used the King dry falafel mix that you combine with water and cook in the air fryer. Any falafels would do)
A quick homemade tzatziki: - 3 tbsp Greek yogurt
- 1/2 grated cucumber
- 1/4 red onion
- 2 tbsp chopped fresh mint
- 1 tbsp garlic paste
- 1/2 lime juice

salt and pepper
Kale chips: - 2 cups Kale
- 1 tbsp olive oil
- Lots of salt and pepper cooked in oven for 15 mins with olive oil and salt)

Extra toppings:
1 Grated carrot
2 tbsp Hummus
2 tbsp Sauerkraut
INSTRUCTIONS:

Start by prepping your falafels or cooking according to packet instructions

Prep your kale chips

Pick the leaves off your kale and combine in a bowl with your olive oil and SnP

Massage with your hands (this is key to make sure the kale isn't chewy)

Cook in oven on 180 degrees for 15 minutes

Combine your tzatziki ingredients in a bowl and set aside

Grate your carrot

Once falafels and kale are cooked layer your tacos

The measurements and ingredients can easily altered to suit your own taste, I just used what I had in the fridge
