CRISPY RICE POKE BOWL
PRE TIME: 5 MINUTES
COOK TIME: 15 MINUTES
INGREDIENTS
For the crispy rice (serves 2):
- 2 ½ cups cooked brown rice
- 1 tbsp olive oil
- 2 tbsp sweet chilli sauce
- 1 tbsp minced garlic
- 1 tbsp coconut aminos (or you can use soy sauce)
To serve (for 1 bowl)
- 2 cups Spinach
- 1 cup cooked Tofu OR Chicken
- 1/2 Cucumber
- 1/4 cup Pickled ginger
- 1 tbsp Light mayo
- 1 x packet Seaweed strips
- Sprinkle Sesame seeds
INSTRUCTIONS
- Mix all the ingredients in a bowl. Line your air fryer or a tray (if using the oven) with baking paper or a seed and sprout baking mat.
- Transfer the rice mixture to your air fryer or oven and cook at 200 degrees for 10 minutes. Give it a stir and continue cooking for another 5 minutes if it’s not crispy enough for your liking.
- Combine all poke bowl ingredients in a bowl with your crispy rice
NOTES
Cooking times may vary if you're using an oven.
The rice can be served in a nourish bowl or even on burritos :)
