CRISPY RICE POKE BOWL

PRE TIME: 5 MINUTES

COOK TIME: 15 MINUTES

INGREDIENTS

For the crispy rice (serves 2): 

  • 2 ½ cups cooked brown rice 
  • 1 tbsp olive oil 
  • 2 tbsp sweet chilli sauce 
  • 1 tbsp minced garlic 
  • 1 tbsp coconut aminos (or you can use soy sauce) 

To serve (for 1 bowl)

  • 2 cups Spinach 
  • 1 cup cooked Tofu OR Chicken
  • 1/2 Cucumber 
  • 1/4 cup Pickled ginger 
  • 1 tbsp Light mayo 
  • 1 x packet Seaweed strips 
  • Sprinkle Sesame seeds 

INSTRUCTIONS

  1. Mix all the ingredients in a bowl. Line your air fryer or a tray (if using the oven) with baking paper or a seed and sprout baking mat. 
  2. Transfer the rice mixture to your air fryer or oven and cook at 200 degrees for 10 minutes. Give it a stir and continue cooking for another 5 minutes if it’s not crispy enough for your liking. 
  3. Combine all poke bowl ingredients in a bowl with your crispy rice

NOTES 

Cooking times may vary if you're using an oven. 

The rice can be served in a nourish bowl or even on burritos :)
