CHEESY TURMERIC TOFU

INGREDIENTS
- 1 tsp olive oil
- 1 brown onion, finely diced
- 1 x 450g firm tofu
- 2 tbsp tomato paste
- 2 tbsp garlic paste
- 1 cup nutritional yeast
- 1 tbsp curry powder
- 1 tsp turmeric powder
- 1 cup water (adjust as needed)
- Salt and pepper to taste
For Serving:
- Rice
- Roasted pumpkin and Brussels sprouts
- Wilted spinach (fresh from the garden)
- Sauerkraut
- Lime juice
- Sesame seeds
INSTRUCTIONS:

Prepare the Onion: Finely dice the brown onion.

Sauté the Onion: Heat a large pan over medium heat and add the olive oil. Fry the onion until it turns golden brown.

Crumble the Tofu: Using your hands, crumble the tofu directly into the pan. Use a spatula to break it down further.

Add Tomato and Garlic: Stir in the tomato paste and garlic paste, mixing well.

Season the Mixture: Add the nutritional yeast, turmeric powder, and curry powder, stirring to combine.

Adjust Consistency: Pour in the water, starting with ½ cup. Stir and add more if needed to prevent sticking; you want a moist but not overly watery mixture.

Season to Taste: Add salt and pepper as desired.

Serve: Enjoy your cheesy turmeric tofu with your choice of sides, such as rice, roasted vegetables, wilted spinach, sauerkraut, lime juice, and sesame seeds.
NOTES:
This dish also makes a delicious topping for toast with avocado throughout the week!
