20 MIN TOFU RAMEN

Cook time: 15 mins

INGREDIENTS 

  • 1 x Mr Chengs ramen kit (I got mine from Aldi)
    1 x 450g block of tofu
    2-3 cups chopped greens (I used a mix of kale and spinach)
    1 cup frozen veggies
    1 1/2 cups water

INSTRUCTIONS:

  1. Dice up your tofu and greens and organise all of your ingredients

  2. In a large pot fry up your tofu with 2 tbsp of the packet broth

  3. Add in your water, and the remaining broth and let it come to a boil before adding in all of your other ingredients

  4. Let it cook for 5-10 minutes or until the noodles are ready.

NOTES:

I semi cheated today as used a ramen packet instead of making it from scratch hehe but was sooooo easy.
In the kit it had a packet of broth, noodles and corn.It also told me to add an egg on top but I didn’t want to.
Perfect to meal prep for 3 meals.
