MEAL PREPPED BEEF FETA PASTA BOWLS

A balanced, flavour-packed bowl that works perfectly for meal prep

INGREDIENTS (per container)

  • 2 cups cooked pasta
  • 1 cup cooked, seasoned beef mince
  • I used beef stock, paprika, salt and pepper, mixed herbs, tomato paste and garlic-infused olive oil
  • 2 cups spinach or rocket
  • 2 tbsp chopped feta
  • 1/2 cup chopped tomatoes
  • Handful of parsley
  • 1–2 tbsp coconut aminos
  • Salt and pepper to taste
  • Parmesan for extra cheese x 

INSTRUCTIONS

  1. Cook pasta according to packet instructions. Drain and set aside.
  2. In a pan over medium heat, cook the beef mince until browned. Add beef stock, paprika, salt and pepper, mixed herbs, tomato paste and garlic-infused olive oil. Stir well and allow to simmer for a few minutes until fragrant and well combined.
  3. To assemble, divide pasta evenly into containers. Top with seasoned beef mince, spinach or rocket, chopped tomatoes and feta.
  4. Finish with fresh parsley, a drizzle of coconut aminos, extra parmesan and extra salt and pepper to taste.
  5. Store in airtight containers in the fridge and enjoy warm or cold.
