MEAL PREPPED BEEF FETA PASTA BOWLS
A balanced, flavour-packed bowl that works perfectly for meal prep

INGREDIENTS (per container)
- 2 cups cooked pasta
- 1 cup cooked, seasoned beef mince
- I used beef stock, paprika, salt and pepper, mixed herbs, tomato paste and garlic-infused olive oil
- 2 cups spinach or rocket
- 2 tbsp chopped feta
- 1/2 cup chopped tomatoes
- Handful of parsley
- 1–2 tbsp coconut aminos
- Salt and pepper to taste
- Parmesan for extra cheese x
INSTRUCTIONS
- Cook pasta according to packet instructions. Drain and set aside.
- In a pan over medium heat, cook the beef mince until browned. Add beef stock, paprika, salt and pepper, mixed herbs, tomato paste and garlic-infused olive oil. Stir well and allow to simmer for a few minutes until fragrant and well combined.
- To assemble, divide pasta evenly into containers. Top with seasoned beef mince, spinach or rocket, chopped tomatoes and feta.
- Finish with fresh parsley, a drizzle of coconut aminos, extra parmesan and extra salt and pepper to taste.
- Store in airtight containers in the fridge and enjoy warm or cold.
